Whats the best Protocol to use while streaming ip*v service?

I know WireGuard is the fastest but curious what advantage/disadvantage of using the others would be ?

IKEv2 - mostly used on phones, also a very lightweight and fast option.
OpenVPN UDP/TCP - very similar ones, their main attraction is obfuscation, which means that while using these protocols, your ISP will not be able to see that you are using a VPN at all.

I think it is not good to advertise that your ISP doesn’t know which vpn is used. There are multiple ways to figure out as example surfshark tls and ssl handshake for applications as API or other telemetry data etc.
In this condition, ISP will easily be able to identify your vpn provider name and data.
As my firewall always shows me two notifications Surfshark VPN API access and possible correlated OpenVPN traffic with this Vender name.
