Is there a VPN which I can self-host and that allows unlimited connections?
Note that I’m not looking for any rubbish like Nord or Express. Just a VPN which I can self host on my own Virtual Private server in the cloud which allows unlimited/10connections simultaneously

Wireguard? I’ve heard that thrown around a bit, never looked into it myself
Try PiVPN, it supports both OpenVPN and Wireguard, pretty easy to install on your server.
Hosting your own VPN server on VPS and cloud services can end up expensive, mainly due to cost of bandwidth. And ‘unlimited bandwidth’ offerings are usually come with garbage quality.
I stick with VPN services for wide selection of locations, true unlimited bandwidth and most importantly, they allow torrent. Currently using AirVPN and Mullvad.
Google’s incubation / side project team has a solution that is easy to host and is exactly for your use case, ie, it sets up a public VPN (does not do internal routing AFAIK) to provide privacy for users.
Oracle Free tier. And wireguard or OpenVPN. PiVPN should handle the software side in a very easy way,
There are good solutions for unlimited bandwidth VPS’s, like the OVH Kimsufi lineup or Hetzner.
