IT sees every authentication, login, etc to Azure. This includes all office apps including teams. If you use a VPN before opening any apps, you will only appear from that IP, that is unless of course your on wifi without VPN and log into your device that is Intune joined and on wifi and then connect the VPN, the IT person would see your Windows login as being in Asia and then switch to the VPN IP.
Meeting hosts cannot see your location or IP. Just IT in the background.

Prepare to get notified by IT, then. Most company IT departments will know when someone is using a commercial VPN and they will be alerted. Next time setup your own VPN at home so it keeps your home IP.
