Call / email / ask the IT people at the old company to remove your device from their management system. That’s the only way.
Not without the company approving it.
Have you tried deleting the profile already?
Settings / General / VPN & Device Management, select the profile and press “remove management”
This will work for a self installed profile.
If it’s one where the company has the serial number enrolled in a deployment programme it can’t be removed by the user.
