I am looking for a solution so our remote folks can map a network drive over VPN on their windows machine and move data to the share from their machine.

That works flawlessly, if the client has low latency and fast bandwidth.
I push 1GB/s via a 10Gbps WAN link and Wireguard.
it works but in terms of speed it’s not exactly great because smb requires really low latency, but it’s fine in most cases
I never tried it but smb over quic should be better but for now it’s limited to windows on azure, from windows server 2025 should be available to everyone
as for the vpn you can use openvpn, wireguard or whatever, if you have a firewall they usually have a vpn server built in, if they don’t and you have a windows server it can be configured as a vpn server with rras

MyWorkDrive converts SMB to https and provide a map drive client that you can use.
Secure File Transfer Protocol already does that to a great degree and has a high tolerance for choppy bandwidth.
I use an app, Total Commander, to treat the SFTP file system much like an SMB file share with direct management as with a local directory.
BitVise also has an excellent SSH/SFTP/Xwindows comms platform that can map specific or default file trees to an account so the client is placed where they will be working when login is complete.
For small clients I use tailscale. Very easy setup and modern.
With Magic dns the share works the same on prem or remote.
